Chowder A type of soup or stew
Ingredients Recipe 1:
1 tub Creamy Chowder sauce.
450g (16 oz, or the weight of a FIFA regulation football) meaty white fish - any type will do.
Cut into bite-sized pieces.
Recipe 2: for feeding hungry mouths:
12 baby potatoes, washed, cut into quarters, and par-boiled for 10 minutes.
Method Basic:
Pour chowder sauce into a pot. Add the fish pieces. Turn onto *low* heat, and slowly allow it to warm through to the simmer.
Once it has just begun to bubble, the fish will be cooked and your chowder is ready. Serve with plenty of crusty bread.
Recipe 2:
As above, but add your potatoes to the sauce as well, and get more bread!
Recipe 3:
For hungry yet fancy-pants mouths. As above, but while the chowder is slowly warming through, take a small frying pan. Melt the knob of butter on a medium - high heat, sautee the bacon lardons until just beginning to crisp up, then throw in the samphire for the last minute. Add a squeeze of lemon juice.
When the chowder is ready, plate it up in little bowls, sprinkle dill on the top, and stack your samphire and bacon as shown on the picture.
A delicious and super simple, fancy-pants starter or light main meal.
