and was shaved like a pencil into water with some seaweed. The flavour was just so incredible - deep and smoky with a taste of the sea, it was sensational. I later learnt from reading about him that he is the master producer in Japan with the world’s top chefs only using his product. It was an honour to meet him and I hope our paths will cross again, just meeting someone so dedicated to the production of his product was extraordinary. He is an example of the type of people Dartmouth attracts. The festival is so well supported by some of the best chefs in the region and it’s great to see them in action sharing their craft. Sharing the stage with Mark Hix is always fun, we cook a lot together and I learn something new each time he cooks something. We have a lot of banter and few drinks whilst cooking and I never tire of it. Angela Hartnett and her partner Neil Borthwick always pack the house and people love to see them


cook. They are hugely talented and lighthearted and I


think people go away feeling very happy. And then we of course have a wealth of our own local chefs, with Serin Aubrey being second to none and top of the leader board. Once I’ve done a

trip round the market I look at what the restaurants are up to and what talks are going on. Browns Hotel is a great hub in the festival always hosting special food and wine events, from fish nights, to sherry tastings to plates of the finest ham in the world. It is a total joy to move from place to place eating and drinking and then going to a talk in the Flavel church listening to great


people chat about their craft. At the Seahorse we entertain our chef friends and all


cook together to make some memorable evenings of great food, wine and hospitality. The nights are long, the mornings early and a steadying drink is needed on most days to get through the fabulous weekend that is Dartmouth Food Festival - one of the finest weekends of my year. www.mitchtonks.co.uk
