2 teaspoons raw chia seeds ¼ cup room- temperature water
2 packed tablespoons chopped fresh cilantro

3 tablespoons
freshly squeezed lime juice 2 tablespoons cold-pressed hemp oil or extra-virgin olive oil
½ teaspoon salt, or to taste Freshly ground black pep- per, to taste
For the salad:
2 medium heads butter let- tuce, cleaned and torn into bite-size pieces ½ cup thinly sliced red onion 1 medium mango, peeled, pitted, and sliced 1 California Hass avocado,
DIRECTIONS
Make the dressing: Mix the chia seeds with ¼ cup room- temperature water and stir vigorously for 1 minute. Let sit for 10 minutes and stir again. Let sit until all the wa- ter is absorbed and the mix- ture forms a thick gel, about 30 minutes.
Combine the chia seed gel with the cilantro, lime juice, oil, salt, and pepper. Make the salad: Combine the butter lettuce and red onion in a large bowl. Toss with the lime–chia seed
