ROASTED AUTUMN VEGETABLES WITH RED LEICESTER CHEESE

Autumn feasting is upon us! This dish is great as an accompaniment to meat or served alone with French bread. I’m trying to lose weight again, as last year’s little black dress is a tad tight. To that end I’m weighing cheese and discovering that my greedy ways might well be the reason for my porky belly. In short I’m being very mindful of what I stuff into my mouth and this is helping… a little. Wine doesn’t count though, right?


So, my last child is now at High School and has a key. I am working more and coming home slightly later…she is ravenous. I am discovering that if she cooks a little rice and then chucks the remainder of last night’s veg in, bit of cracked pepper and a further sprinkle of cheese I come home to a happier pre-teen and teen, a fairly filthy kitchen but time in which to decide what supper will be. Healthy-ish snacking… even helps her concentrate on the homework that now engulfs her.


Time does march on doesn’t it?! INGREDIENTS:


Don’t be afraid to vary these to your preferences. 1 large butternut squash ½ medium sized cauliflower 1 medium red onion 1 large red pepper 2 courgettes 2 cloves of garlic, crushed Fresh herbs - sage, chives and fennel, roughly chopped 100g Red Leicester cheese Sprinkle of chilli powder Sea salt to taste 1 tbsp. balsamic vinegar 2 tbsp. rapeseed oil
