HEALTH BEGINS IN THE KITCHEN:


SONOMA COUNTY, CA. ~ Use the same recipe for: Caber- net Sauvignon, Zinfandel, Mer- lot, or any sweet grape. My hus- band and I grow wine grapes in Sebastopol, in the Russian River appellation of Sonoma County, and most of them end up in our wonderful Turtle Vines Pinot Noir. Several weeks aſt er our main harvest, a much smaller amount of grapes ripen. Many of these end up in this delicious jelly recipe. Unlike most


jams and jellies that use as much sugar as fruit and taste more like candy than a fruit spread,


the ones


I make use much smaller amounts of sweeteners thanks to Pomona’s Uni- versal Pectin. I have an entire chapter of recipes dedicated to making healthy jam and jelly in my eBook, Health Begins in the Kitchen. T ese recipes use a variety of sweeteners, such as sugar, honey, agave, apple or grape fruit juice. REQUIREMENTS Jelly Bag


Ingredients:


For the calcium water: 1⁄2 teaspoon Pomona white calcium powder 1⁄2 cup filtered water


For the jelly: 11⁄2 cups organic cane sugar 2 tablespoons plus 2 teaspoons tan Pomona pectin powder 7 pounds Pinot Noir grapes


1⁄2 cup freshly squeezed lemon or lime juice


2 tablespoons plus 2 teaspoons calcium water


Directions: Make the calcium water: Mix the white calcium powder and water in a small, clear jar with a lid; set aside. Make the jelly: Wash the jars


in hot, soapy


water, rinse well, and let them stand in hot water. Wash the lids and bands with hot, soapy water and rinse well. New lids must be used for each canning. Place the lids and bands in a pot of water and bring to a sim- mer; simmer for at least


10 minutes.


Let them sit in the simmering water; remove as needed. Fill a large can-


ning pot with water and bring to a boil. Meanwhile, in a small bowl, thoroughly mix the sugar with the tan pectin powder; set aside.


Remove the grapes from the stems; wash the grapes and mash until juicy. Place the

grapes and their juice in a pot with 1 cup of water. Bring to a boil on high heat. Lower the heat and simmer, covered, for 10 minutes. Let the grapes and juice cool a bit, then pour into a jelly bag and let it drip into a bowl until the juice stops, re- serving the juice. Squeeze the bag to get the remaining juice. Measure 8 cups of juice and put it into a pan with the lemon or lime juice. Shake the cal- cium water to combine. Add 2 tablespoons plus 2 teaspoons calcium water to the pan of juice and stir well. (Save the remaining calcium water in the refrigerator.) Bring the grape juice mixture to a boil. Add the pectin-sugar mixture and stir vigorously for 1 to 2 minutes while cooking to dissolve the pectin. Return to a boil then remove from the heat. Immediately fill the jars with jelly to 1⁄4 inch from the top. Wipe the rims clean with

a clean towel. Screw on the 2-piece lids and use a jar lifter to carefully place the filled jars in the boiling water to cover. Cover and boil for 10 minutes (add 1 minute more for every 1,000 feet above sea level). Use the jar lifter to carefully re- move the jars from the water; place them upright on a towel, spaced a few inches apart and away from any drafts to cool. As they cool, the seals and lids should be sucked down (you’ll hear them pop as this hap- pens).


Label each jar with the


contents and date of canning. Store in a cool pantry between 50°F and 70°F. The jam lasts about 3 weeks once opened.
