IAFE To Offer Fair Management Class at Convention


“Principles of Food & Beverage” The IAFE will be sponsoring a workshop called the “Principles of


Food & Beverage.” While this is an Institute Class, all Convention attendees are welcomed and encouraged to attend. The workshop is an introduction to the principles and role of


food and beverage service at fairs and fairground facilities that suggests ways to create a successful environment for the fair and the concessionaries where a high level of guest satisfaction and financial return are possible because of their working together. Other key points covered will include: *Contract models *Vendor selection, placement, menus and layout *Business needs of successful mobile food operators *Pricing *New technologies and trends * “Front Line” role of concessions


The presenter will be Rey O’Day. Rey O’Day has extensive


background in the entertainment, events, and food and beverage industries. She is currently the Executive Manager of NICA West, a sister organization focused on developing vendor/fair staff Com- munication Committees at fairs and advantaging its vendor mem- bers with the power of group discount buying. Most recently she served as the Producing Artistic Director at Performance River- side, a highly regarded professional musical theatre company. Over a period of 18 years she held a number of key management positions at Fairplex, home of the LA County Fair, including Assis- tant Operations Manager, Retail Sales Manager, Entertainment Manager, Director of Food and Beverage and General Manager of Cornucopia Foods, LLC. In addition to this course, she is an instructor for the Guest Ser-


vices course for the IAFE Institute of Fair Management. She is also a Best Practices/Industry Standards Consultant for Western Fairs Association, and Program Manager for The Box, a 200 seat theater in the City of Riverside. She has conducted orientations and guest service training for The Hollywood Bowl, gives keynote addresses and leads workshops for numerous organizations, and adjudicates show choirs. She holds a California Community Col- lege Teaching Credential in Dance and a Bachelor’s Degree in Business Management.

How To Get 100% Results” Presented by Norb Bartosik


Through the IAFE Speaker’s Bureau, we are pleased to


announce that Norb Bartosik will be presenting a special workshop at this year’s Convention. Norb Bartosik is the recently retired General Manager and CEO of the California Exposition and State Fair. He is also a past Chair of the International Association of Fairs and Expositions. Norb’s program titled “Customer Service and How to Get 100% Results” will address from the time your guests decide to attend your Fair until the time they leave, you need to have a plan in place for making sure they experience the best visit they could have imagined. Norb will challenge you to see the Fair through the customer’s eyes, not Fair manage- ment! And how to make sure that everyone knows, from the Board to staff, the patron is the most important part of the Fair’s overall success.


Sows, Stitches, Sunflowers


and Everything In Between! Presented by Jessica Underberg


Through the IAFE Speaker’s Program, we will also have a


second guest speaker at this year’s Convention. Jessica Underberg will present a workshop on Competitive Exhibits titled Sows, Stitches, Sunflowers and Everything In Be- tween! Jessica has been with the Erie County Fair for 17years and is currently serving as the Assistant Fair Manager and the Agricultural Manager. She is actively involved in the International Association of Fairs and Expositions. Her program addresses the challenges in this fast paced world, we must continually change the look and feel of our exhibit halls; no one wants to hear the dreaded statement “it’s the same old thing.” Learn about new competitions and display methods that can be applied to any size Fair through the use of visual aids and discussion.

During her Fair visits, Federation President Gayle Hart met with Rhonda Ward and Brenda Williams from the Collier County Fair to start planning for this year's Giles Ellis Memorial Golf Tournament that will be held May 14th in conjunction with the Con- vention.


8 Just a note……………


Mary John Panacek of Belle City Amusements and Saundra Wilson of the Citrus County Fair are both recovering from major surgeries. Miss Mary will be back in action in Plant City and Saundra will be ready for the March Fair. They both thank everyone for the prayers and well wishes.
