‘I can still shoot but I get a far bigger buzz out of working my dogs’


I used to get from working in the kitchen.’ Wares loves the two estates, which are as


different from each other as 63 Tay Street was from the Anglers Arms. Scone is a good mixed shoot with pheasant and partridge, which has woodland drives and traditional woodland-to- field pheasants. With five drives and bags of 100-200, it is perfect for the casual shot. Logiealmond is an altogether different


Gradually I got more and more involved with the shoot and now I’m shoot captain for Scone palace and Logiealmond. I’ve spent a lot of time on shoots and know how to place guns, and although I find it difficult to beat, I love picking-up and spend five or six days a week doing exactly that. ‘I can still shoot, but to be honest these days

I get a far bigger buzz out of working my dogs. I’ve got two springer spaniels, Mocha and my young pup Cracker, plus my black lab Barney, who’s an old gentleman who hobbles along but will then cross a burn and run up a hill to pick birds that no other dog I know could find. ‘Most of all, though, it’s all about being


outside because the exercise and fresh air are really good for my health. It also gives me that same camaraderie and sense of purpose that


proposition. New keeper John Cruickshanks has designed the drives to suit ‘top, top shots’, with the pegs at the bottom of a steep hill along the banks of the river Almond while the birds scream over the brow of the hill, with fast partridges a speciality. The bags here can be anything up to 500 birds in a day, with Wares himself recently picking up 66 birds between three pegs on a drive known as Big Logie. If the guests – ‘a really diverse crew who


range from Aberdeen oil guys and local farmers to syndicates or City bankers’ – are really lucky, they might even have Wares cooking for them. Head keeper John’s wife will usually do the honours, with John shooting pheasant and partridge from the estate to make a casserole or game pie, but every so often Wares will weigh in and help. That means guns being cooked for by a man whose list of past celebrity clients includes Andrew Lloyd Webber, Princess Diana, President Mitterand and Michael Caine. But mostly what they’ll see is an efficient shoot


captain who moves guns, picks up efficiently and talks shooting with an easy knowledge. ‘Which is just the way I like it,’ he jokes.
