New appointments position Halo to excel in catering on a large scale


The team at Halo Conferences and Events, based at Southampton Football Club, has grown with two strategic appointments


Erik Ammer joins as director from Do & Co Event Catering, Formula One Redbull Racing, Bistro Delicat London and the Ritz Carlton, while Andrew Gibney has been appointed as head chef from Zest Catering, Lord‘s Cricket Ground, Mandarin Oriental London and the QE2.


Offering five-star service and food, Halo‘s vision is to grow, not only as Southampton Football Club‘s catering operation, but also as a highly versatile outside catering company. It has contracts with popular regional venues such as Southampton Cruise Terminal, which can cater and host events for up to 2,500 people for exhibitions, product launches and gala dinners, and is increasingly undertaking in-house catering for local corporate companies.


Keenly with its eye on the ball with a view to working from another stadium in the longer term, Halo can cater for up to 1,500 guests on match days, plus 36,000 throughout the entire concourse.


Ammer‘s ambition and vision is to grow Halo to become the premier conference and event option, either at the stadium or at external venues. With immaculate attention to detail, his creative flair inspires not only the company but his team too.


Equally creative, with a passion for food, Gibney has a keen eye for detail and presentation and for understanding and interpreting clients‘ needs, from conception to the final plated presentation. He has experience of large-scale banquets, outdoor catering and bespoke intimate fine dining.


Both have extensive knowledge of international food and drink combined with an awareness of the very best in seasonal produce, and work together to create seasonal menus. In doing so, they always endeavour to source produce from local suppliers; and dishes are cooked from fresh produce, which gives the food great flavours and taste, something Halo is becoming noted for throughout the region.
