But, he says: “You can’t do that sort of thing if you compromise on quality. “Our customers came to expect top quality meat when they walked into the old shop: they expect to find everything of the same quality here, which is why we set some very demanding standards when we were deciding which producers’ goods to stock.”

Investing a seven-figure sum in such a development at a time when the country has one foot on the slippery slope of recession and the other on a bar of soap may sound a foolhardy step. But, on the contrary, it appears to have been an astute move. Market analysis shows that the public’s growing appetite for good-quality food has barely been restrained, even at a time when spending on others goods and services – such as cars, holidays, and clothes- is being reined in. “We didn’t have any option but to move, and we decided that if we were going to go we would find the best available site – and create something really special to match it,” said Malcolm.
