Starter HARIRA
(MOROCCAN LENTIL AND TOMATO SOUP)
This beautiful soup combines the wonderful rich flavour of cloves, the smokiness of paprika, the warm earthiness of cumin, the aromatic bay leaf and the fullness of garlic to compliment the rich lamb and tomato base.
Serves 4
2 tbsp olive oil 2 small onions, chopped 2 large garlic cloves, crushed 500g lamb shoulder steaks, trimmed and cut into small chunks ⁄2
1 1 ⁄2 tsp ground cumin
2 tsp paprika 1
tsp ground cloves
1 bay leaf 2 tbsp tomato paste (concentrated puree)
1 litre beef stock 900g tinned chickpeas, rinsed and drained
800g tinned chopped tomatoes 30g finely chopped coriander (cilantro) leaves, plus extra, to garnish Small black olives, to serve
