GRILLED MUSHROOMS ON WHOLEGRAIN TOAST
Grilling is a quick and healthier way to cook and mushrooms count towards one of your five a day, while the toast will contain essential vitamins, minerals and a good helping of fibre. This is also an incredibly quick and simple recipe.
Serves 1-2
2 slices wholegrain bread 6 medium mushrooms, chopped Low fat spread 3 or 4 cherry tomatoes (optional) Salt and freshly ground black pepper, to serve
1 Chop then grill the mushrooms and tomatoes on a tray until the tomatoes are soft and the mushrooms begin to brown.
2 Meanwhile, put the slices of bread in a toaster, or grill until lightly toasted on either side.
3 Butter the toast with low fat spread, remove tomatoes and mushrooms from the grill and place on top the toast, then season with salt and pepper as required. Serve immediately.
RASPBERRY BREAKFAST PANCAKES
This is a great weekend breakfast and a doddle to make. The recipe makes 18 small pancakes, so it’ll serve between 3 and 6 – depending on how hungry you are.
8 tbsp raspberry yoghurt, and a bit more to serve
Finely grated rind of 1 lemon 2 large eggs, separated 25g unsalted butter, melted, and some for the pan
150g self-raising flour pinch of salt
150g raspberries and a handful more to serve
clear honey or maple syrup
1 Whisk the yogurt, lemon rind, egg yolks and butter together in a bowl and set aside for 10 minutes.
2 Sift in the flour and salt and whisk until smooth, then, using a separate bowl, whisk the egg whites until stiff.
3 Whisk a third of the egg white into the batter mixture until it’s well combined. Then use a metal spoon to fold in the remaining egg white, together with the raspberries.
4 Heat a large frying pan and melt a little butter. Add spoonfuls of the batter to the pan, giving them plenty of space and cook for one to two minutes or until bubbles appear. Flip them over and cook for a further one to two minutes. Remove the pancakes from the pan and keep them warm while you do the rest of the mixture.
5 Serve up, topped with some honey or maple syrup and raspberries.
