At 1539 we are proud of where each and every one of our ingredients is sourced.We invest a lot of time in finding the perfect local suppliers for the restaurant.
Kenny Woods at Anglesey Sea Bass provides us with the freshest fish you can source without catching them yourself! Williams of Flint, a family business of 75 years, provides us with all of our red meat.
Hatchmere Eggs has three large wooden barns in which their chickens are free to roam without cages and provide us with the most yellow yolked eggs you have ever seen.
Willington Fruit Farm provides us with all our fruit and we grow our own herbs at the racecourse.
This is just a handful of the people we work with, but gives a taste of the time we invest in ensuring our menus are seasonal, considerate of animal welfare and supportive of local suppliers.

Alderley Edge Hotel now offers two very different eating experiences. The fine-dining Alderley Restaurant is now complemented by the relaxed alternative atmosphere of our new brasserie.
One is among the country’s top 10% of prestige eating places – serving classic, exceptionally stylish cuisine with flair, imagination, extravagant twists and a creative depth of flavour. The other specialises in a new take on high-quality retro brasserie dishes, throughout the day and evening, in a more relaxed atmosphere.
Alderley Edge Hotel’s reputation for innovative food just acquired a new dimension that rivals the attraction of its panoramic views over the beautiful Cheshire Plain and Derbyshire countryside. Two cuisines, two eateries, two atmospheres… one kitchen team. A very different experience. The restaurant has three AA Rosettes and the hotel is a 4 Star AA Hotel.
