Quesada Focus

Prawn In Coconut Sauce
Ingredients: 1lb of shelled and prepared medium prawns (thawed) 2 tsp of wine vinegar 1 tsp of salt
2 tbs of ginger paste 1 tbs of garlic paste 2 med onion roughly chopped 3 tbs of oil 1 tsp of whole coriander seeds 2 tsp of whole cumin seeds 1 tsp of chopped fresh green chillis or chilli powder
1 tsp of turmeric ½ (300ml) pint of thick coconut milk. Salt to taste For garnish chopped fresh coriander.
Preparation: 1. Rinse the prawns and drain well. Marinate the prawns in the vinegar for 30 minutes 2. Heat half the oil and sizzle the prawns, save the vinegar marinade for later. Toss them for 3 - 5 minutes until just turning pink. Remove the prawns. 3. Using the same pan sizzle the onions with the other half of the oil until golden brown. Stir in the garlic and ginger paste,
salt, coriander, cumin, turmeric and chilli and fry for another minute. 4. Add the prawns, pour the coconut milk and mix well. Bring to boil then lower the heat for 5 minutes. 5. Check for taste, add salt or chilli if required 6. Garnish with fresh coriander and serve hot with rice or naan.
Grumpy old man - Deputy Wife
A male driver is pulled over by a cop and the following conversation takes place: Man: What’s the problem offi cer? Cop: You were going at least 75 in a 55 zone. Man: No sir, I was going 65. Wife: Oh Harry. You were going 80. (Man gives his wife a dirty look.)
Cop: I’m also going to give you a ticket for your broken tail light.
Man: Broken tail light? I didn’t know about a broken tail light!
Wife: Oh Harry, you’ve known about that tail light for weeks.
(Man gives his wife a dirty look.)
Cop: I’m also going to give you a citation for not wearing your seat belt. Man: I just took it off as you walked up to the car! Wife: Oh Harry, you never wear your seat belt. Man: Shut your mouth, woman!
Cop: Ma’am, does your husband always talk to you this way? Wife: No, only when he’s drunk.
