Reader’s Recipe Corner - by Diane from Pinar de Campoverde Cheese And Leek Sauce


Hi everybody. I hope you all had a good Christmas and Father Christmas brought you some fab pressies! I am glad to say that the Christmas cake was well received by our friends and, even though I say it myself, it was very tasty and unbelievably moist. I will definitely use the recipe again and I have already had a request to make the cake in May or June. An early practice run for next Christmas.


The recipe this month is for a tasty and very easy Cheese and Leek sauce. This recipe was given to me a few years ago and it is so good I have even served it at a few dinner parties. I have also known friends who say they don’t like leeks to love this sauce!


Ingredients – white sauce (serves 4 people) 25g / 10z butter 25g / 10z plain flour 600ml / 1 pint milk Salt and pepper 2 leeks


grated cheddar cheese


Cut the leeks and, for quickness, place in a microwave dish with water and cook for about 5 minutes. 1. To make the white sauce melt the butter in a saucepan. 2. Stir in the flour and cook for 1-2 minutes. 3. Take the pan off the heat and gradually stir in the milk to get a smooth sauce. Return to the heat and stirring all the time, bring to the boil. 4. Simmer gently for 8-10 minutes and season with salt and pepper. 5. Add the cheese and leeks and mix together.


The sauce compliments chicken breasts and can be served with a selection of vegetables. Once you have tried this sauce it will become one of your favourites, especially as it is so easy to make. Until next time have fun in the kitchen!
