Easy Cooking with MOORE


Here’s something that can be thrown together in a hurry for unexpected company or as a contribution to a potluck.


TAMALE PIE 1 large Onion, chopped


2 Tbsp. Chile Powder Salt & Pepper to taste


Sauté onion, pepper, and celery in oil until soft. Place in a large ovenproof casserole; add drained beans and corn, tomatoes and ham with seasoning.


Pastry Crust: 1 ½ cups Flour ½ cup Cornmeal 1 tsp. Seasoning Salt Pepper to taste


½ cup Butter or Margarine or Shortening 1/3 cup Milk or Water


Cut butter into seasoned fl our/cornmeal mixture. Add enough liquid to make dough.


Roll out on a piece of wax paper then place over top. Brush with a bit of milk and bake at 350 degrees for about 30 minutes or until crust is browned.


OR corn bread can be used as a topping or can be served on the side, baked in 8x8 pan.


CORN BREAD


1 Egg, slightly beaten 1 cup Milk ¼ cup Oil 3 Tbsp. Granulated Sugar 1 cup Cornmeal 1 cup Flour 3 tsp. Baking Powder Dash Salt


Combine egg, milk, oil and sugar. Mix dry ingredients together before stirring into liquid ingredients. Bake at 400 degrees 30 minutes.


Good served with some shredded cabbage (Savoy if available) drizzled with Cole Slaw dressing or Salad Cream *. Sprinkle with toasted sunfl ower seeds.


* Rather than store-bought, I mix together some mayonnaise, a bit of milk, some sugar and mustard.


1 large Green Pepper, diced 1 26 oz. can Stewed Tomatoes 6 stalks Celery, diced 1 Tbsp. Oil


2 cups cubed Ham


1 19 oz. can Red Kidney Beans 1 14 oz. can Corn Niblets

Here we are again, the September/October issue. I sure hope fall comes late as I don’t recall seeing much of a summer.


With that being said I need to touch on antifreeze again.


Last fall I wrote about the diff erent types of RV antifreeze available. T is spring when I de-winterized my personal RV, I could certainly notice an improvement in the water system aſt er using a good quality RV Antifreeze. It was nice not to have an odour or taste aſt erwards.


Trust me, for the little more added expense it is well worth the extra fi ve bucks.


When purchasing your antifreeze, look at the container closely. If it has the fi re warning label on it, the product contains alcohol, which can be damaging to your water pump diaphragms, toilet blade seals, etc. Look for antifreeze which is Propolene-Glycol-based.


Again, the cheaper, readily available RV antifreeze is usually an alcohol-based product, which will leave an aſt ertaste and may contaminate the water supply lines.
