BAKLAVA RECIPE Try our baklava recipe - we used some local honey which made it very special.


• 450g filo pastry


• 200g chopped and shelled pistachios mixed with 1 tsp ground cinnamon


• 120g butter, melted • 100ml water • 100g caster sugar • Juice and zest 1 lemon • 4tbsp runny honey

Heat the oven to 180C/Gas 4. Butter the bottom and sides of a 22x30cm roasting tray.


Line the pan with 2 sheet of filo pastry and brush with the butter. Sprinkle over some of the nuts and cinnamon mixture. Repeat until you have used up all the nuts, butter and filo, finishing with a layer of pastry.


Using a sharp knife cut the pastry into diamonds all the way to the bottom of the tray. Bake for 30-40 minutes until the baklava is golden and crisp.


While the baklava is in the oven, dissolve the sugar in the water in a small pan. Stir in the lemon juice and zest and the runny honey. Simmer for about 20 minutes until tacky.


Remove the baklava from the oven and pour the honey syrup at once over the baklava in the tray. Leave it to cool and cut into the diamond shapes. Serve as it is or with some Greek Yoghurt and extra runny honey.
