THE head chef at Peterstone Court who started his career working at London’s Ritz Hotel is celebrating after being crowned the best in Wales 2010.
Iain Sampson, head chef at Peterstone Court Country House, near Brecon, Powys, won the coveted Welsh title after a closely contested final.
He beat three rivals in a cook-off at the Welsh International Culinary Championships, near Colwyn Bay.
Iain said he was “really chuffed” to win the title, adding: “It’s a great honour to become National Chef of Wales.
“I have done a lot of competitions in the past but haven’t competed for 10 years. It was almost the last chance for me at the age of 42.”
He collected a trophy and was able to celebrate with his fiancée Amanda Williams, who acted as his commis chef for the day at Coleg Llandrillo Cymru, Rhos on Sea.
Mr Sampson plans to spend the £2,000 in prize money on his wedding and honeymoon in August.

Fish Course: Fennel and saffron soup with red mullet
Main course: A cutlet, shoulder and kidney of Welsh lamb with potato puree and confit of root vegetables
