Making your own pickles from a huge variety of vegetables is easy and fun, and extremely economical. I have included one of my favorite pickle recipes for you.


The Magic Plum Pickle One of the most miraculous pickles and powerful digestive aids is the umeboshi (oo-ma-bow-she), a salted, fermented “plum,” closely akin to the apricot. Umeboshi are about the size of a large grape and are red in color, resulting from their being pickled with shiso. This salty- sour


another portion, and if needed, take a third time. Avoid overeating any salted foods. Limit your total intake to one small umeboshi plum (the size of a large grape.) Do not throw away the pit, but save it in a glass jar. You can use it later to suck on, as a remedy for indigestion, or to make an energiz- ing beverage. This is the best electrolyte and mineral replacing tea I know: Remove the flesh of the umeboshi plum. Take just the pit and simply add it to a quart of spring water. Boil together for 5 minutes. Let this “tea” come to room temperature. For athletes, active people, or those with

anemia. It is a very cooling and re- freshing tea for anyone in the summer time. You may add a dash of grain sweetener if you desire.


Don’t Leave Home Without Them


I never leave home without umeboshi plums in my car, backpack, or traveling bag. I know people whose lives have literally been saved by umeboshi following car accidents, as well as severe illness and food poisoning. The Japanese believe that one umeboshi a day is the best defense against all kinds of infections. That quantity may be too much for us westerners who should eat about two per week to strengthen digestion and the intestines as well as increase the stomach’s digestive juices.
