Cooking up
M
y cooking skills are negligible.
I don’t just mean I burn every-
thing, I also have little idea
about which ingredients work
well together, or how to make the most
simple (apparently) of dishes, like a chilli.
So I was slightly nervous, to say the least,
when I learned that the Sardinian head chef

at Sainte Anne Resort, Rocco Evola, was
“treating” us to a Creole cooking session.
I could see the benefits: my friends would
be delighted that I might expand my signa-
ture (read: foolproof M&S) dinner of fajitas.
But I still feared the humiliation of making a
no hurry
pig’s ear of it, especially as we would be
eating our culinary creation for lunch.
I needn’t have worried. As we filed into
the gleaming stainless steel kitchen of
L’Oceane restaurant, a large glass of chilled
rosé did much to quell my nerves and I could

We each got to don a starched white
apron and a traditional chef’s hat, but this
was less of a cooking lesson and more of a
culinary appreciation session as we watched
Rocco begin to combine fenugreek, curry
leaves, thyme and oil in a sizzling pan.
We took it in turns to help him add diced
garlic, ginger and onions, while the more

but the latter had the real toes-in-the-sand
experience, and a superb “discovery” menu
which changes every night.
The Clarins Spa has also been expanded
with a new yoga pavilion and nine treatment
ourism rooms. The new Sports & Activities Centre
has a cardio room and Power Plates.
