Seema’s Indian Kitchen – passionate about food…


Before the birth of her daughter (Priya who is now twelve) Seema Nahar worked in West London for St Martins Catering Company - who supplied the airlines at Heathrow Airport with prepared meals and supplied large retail chains including Tesco and Sainsbury’s . Previously she worked for a well established Indian Restaurant in Southall Broadway - Ealing, London. More recently she helped out briefly at Harlequin; they were considering setting up an all female Indian kitchen.


Seema took the decision to leave work to look after Priya, and now that Priya is going into second year at Hillhead Secondary she finally feels it is time to resume her own career. Seema has been considering setting up her own catering


business for some time now, as she has a passion for cooking and creating new dishes. Everybody who tries her vegetarian dishes loves them and she has quite a reputation amongst family and friends for producing mouth watering dishes. She is herself a vegetarian and has been all her life. When she lived in London there was a great choice for vegetarians, however, it is often quite difficult to find good vegetarian food, particularly Indian food in Glasgow.


Seema has many family recipes from her mother and grandmother which she has brought with her from India. Given the recent difficulties with the food chain, a lot more people are considering vegetarian options and Seema hopes her new business will make it easier for


Seema’s Vegetable Pakora Recipe Ingredients


300g Gram flour ( besan) 120g chopped Onions 350g chopped Potato 100g chopped Spinach 160g chopped Cauliflower 10g Salt (or to taste) 7g ground green chillies (optional)


2g Garam masala 3g Cumin seed ( jeera) 200ml Water Vegetable oil Method Peel and dice potatoes Peel and finely chop onions Finely chop fresh spinach Chop cauliflower medium pieces Place in large bowl and add spices Add Gram Flour


Mix with water to produce Pakora mixture Heat vegetable oil Deep Fry Pakora mixture until brown - ( using tablespoon to determine Pakora size) Drain oil from fried pakoras Let Pakoras cool slightly before serving.


Will serve 4-6
