Perfect the hard-boiled egg
Offering high-quality lean protein and brain-boost- ing choline, hard-boiled (also called hard-cooked) eggs are a healthy staple—they even make a perfect take-along snack. Follow these easy steps for perfectly done eggs every time.
1. Place eggs in a saucepan (don’t crowd) and cover with cold water by 1 inch. It’s best to use slightly older eggs; very fresh eggs are difficult to peel.
2. Bring to a full boil, uncovered. 3. Remove pot from heat, cover, and let eggs sit for 15–18 minutes.
4. Transfer eggs to a bowl filled with cold water, or run under cold water until completely cool. This helps avoid overcooking, which causes the harmless but unsightly greenish ring around the yolk.
5. Refrigerate hard-boiled eggs, unpeeled, for up to one week. ➻
