The New Orleans signature dish known as “gumbo” may be the perfect metaphor for the city and its eclectic cuisine. Where else can you find such a huge melting pot of culinary influences from so many far-flung cultures – French, Spanish, Portuguese, African, Cuban, Native American, Cajun, Creole, Italian and down-home Southern – stirred, spiced and blended harmoniously into a cuisine all its own that is rich, surprising, subtle, always innovative and exciting. Each subculture draws its inspiration and ingredients from the sea, the farms and the bayou. Crawfish is king, shrimp, rice and red beans deliciously ubiquitous, jambalaya and gumbo, like jazz, spicy, flavorful variations on a theme (with the addition of pork, chicken, or even alligator). From beignets (French doughnuts) to étouffées, from Po’ Boys (overstuffed sandwiches) to haute Creole, New Orleans’ cuisine is rich, hearty, and adventurous food for the soul. Bon appétit.
From the heart of New Orleans and Bourbon Street jazz to a Cajun dinner in the “Crawfish Capital of the World,” experience the cultural soul of the Big Easy and French Louisiana
