WORLD’S 50 BEST RESTAURANTS

SIMPLY THE

Now in its ninth year, the Oscars of global dining has seen not only a change at the top, but also a wealth of young, dynamic chefs bringing new ideas to the table. Haute Cuisine profiles the homegrown talent in the cream of the culinary crop

A

fter an incredible four consecutive years at the top Ferran Adrià’s elBulli took second place at this year’s prestigious S Pellegrino World’s 50 Best Restaurant

Awards, organised by Restaurant Magazine. Taking the coveted top slot with the most votes from the

aademy of more than 800 international critics, journalists and food experts was Noma, run by 32-year-old chef René Redzepi. Situated on Copenhagen’s dockside in a stylishly converted 18th-century shipping warehouse, where most of the jaw- droppingly beautiful dishes are served by the chefs themselves, Noma leads the trend in “cold climate” cuisine showcasing the best Nordic produce (see our interview with René on p102). Despite his restaurant’s demotion, Ferran’s achievement of

remaining at the top on five occasions in the last decade is an outstanding feat and in honour of this, he was presented with the first ever Chef of the Decade award by Restaurant Magazine (see our interview with Ferran on p136). Spain was unveiled as a culinary hotspot with no fewer than four entries in the top ten.
