Josefina Larrain have created an all-natural
boutique hotel in the Yucatan capital of
Merida. The ‘Xocolat’ in the hotel’s name references
this area’s history as the place where the Mayans first
discovered cocoa and offered it up to their gods. The
‘Rosas’ conjurs up the hotel’s romantic aura and dusky
pink colour scheme, not to mention the fresh cut
roses which are strewn throughout the 17 guestrooms
and suites.
Once made up of two colonial mansions, the haute-
pueblo building has been restored, Rios and Larrain
melding the rustic elegance of the historic mansions
with modern accoutrements, like state-of-the-art
entertainment systems and open-to-the-sky bathtubs.
Chocolate-based spa treatments and sweet-smelling
amenities have been lovingly engineered by master
chocolatier Mathieu Brees, who runs an in-
hotel Belgian-Mexican fine chocolates boutique. With
its prime location on the prestigious Avenue Paseo
Montejo and use of local materials like hand-
fabricated cement tiles and chucum stucco, guests to
Rosas y Xocolate can fully experience the old-world
charm of the Yucatan peninsula.
