Spicy Corn Chowder
Makes four servings

1 tablespoon olive oil favorite
3/4 cup chopped onion, chopped
3 cloves garlic, peeled and chopped
1/2 pound skinless, boneless chicken breast,
cut into 1/2 inch pieces
1/2 cup chopped carrot, chopped
1/2 cup chopped celery,
chopped
1/2 cup red bell pepper,
chopped
1 cup apple, peeled cored and
chopped
1 tablespoon curry powder
1 teaspoon ground ginger
1/2 teaspoon crushed red
pepper or cayenne
1/4 cup tomato sauce
2 tablespoons all-purpose flour
4 cups chicken broth
1 cup corn
1 bay leaf
1/2 cup half-half
Chopped fresh cilantro
Pre heat a soup pot to medium
temperature. Add olive oil, onion
garlic and cook for one minutes.
Add chicken and cook until lightly colored.
