Marinades and Coatings The Added Value Challenge
With summer and BBQ season upon us, we know at busy times it’s easy to create the same range and type of products, so we challenged our experts in marinades and coatings to come up with some creative ideas to help keep you and your customers interested.
Pureety Head Chef and MD, Gareth Pearson cooked up these handy glaze tips to give your counter a new look…
• How about a game of Wing roulette? A mixture of mild and spicy chicken wings from Maple to Kickin Chilli… see just how hot your customers can go!
• Sweet Katsu Curry marinade sauce is primarily used on chicken but why not create some Sweet Katsu curry chicken sausages instead. A little something extra for your BBQ loving consumers.
• Mint and Lamb go together like… well the perfect partnership BUT have you tried Lemon pepper crumbed rack of lamb? We promise you and your customers will love it!
• Hunters Chicken is always a winning flavour but give this ‘Inside Out Hunters Chicken’ a go for a real showstopper - Cheddar cheese stuffed chicken breast, glazed in Sticky BBQ marinade.
• And finally, for a healthy dish with an added kick… try Spicy Salt & Pepper glazed pork strips, ideal to mix into a stir fry and display in the multi deck.
Lucas told us they have been putting a lot of emphasis on developing their Easicoat range of ready-mixed coaters and gave these ideas for new ways of using them
• Why not try making themed sharing platters or picnic boxes using any one (or a mix) of the ten varieties in the range, which includes internationally inspired flavours like Southern Fried, Thai Firecracker, Katsu Curry, Bombay and Mexican.
• Coaters are used to create and compliment other products. Try alternating products in the counter or mixing up several different coaters on one kind of meat to create interest and variety. This works particularly well as the coaters are different colours and several feature visible herbs, as well as interesting textures, for example, the Mexican mix contains real taco pieces.
• What’s even better than a bacon sarnie? A bacon burger! Try coated bacon burgers, stuffed with cheese & ham melts. The burgers are brilliant for using up bacon trimmings and can be coated in any of the coaters - for example, Cheese & Cracked Black Pepper, Garlic & Herb or Hot & Spicywork particularly well.
• Have a go at pepping up a classic such as Chicken Kiev using a flavoured coater on the outside. Garlic and herb guarantees an extra garlicky flavour all through the dish!
