The rise and rise of baking


At more than 120 years of age, it’s one of the oldest parts of LSBU – but the National Bakery School is still at the cutting edge of baking education


With the country once again gripped by Great British Bake-Off fever, it seems like baking has never been so fashionable. ‘All publicity is good publicity,’ says John Marchant, who recently stepped down after more than 20 years as the head of LSBU’s National Bakery School. ‘The Bake-Off has really raised the profile of baking in this country and boosted interest in our courses.’


In fact, baking has always been a vitally important part of life on the LSBU campus, from its establishment in 1894 to the First World War, when women students were first admitted (pictured above), through to the 120th anniversary revamp in 2014 which saw the School add a new state-of-the-art professional demonstration bakery and launch a new Masters in Baking Technology.


‘Baking has always been a wonderfully rewarding career,’ says John Marchant. ‘After all, bread really is the staff of life. It’s great to see people from all walks of life recognising that, and wanting to learn more.’
