To maintain a competitive edge in the bakery sector it is important to be aware of the latest consumer demands. The Puratos Taste Tomorrow trend forecast is based on a global consumer survey of 20,000 people in 50 countries. It sets out and examines some of the top bakery trends projected for 2024.

he Taste Tomorrow consumer research programme covers the bakery, patisserie, and chocolate industry and purports to be the largest program of its kind


globally. Its latest research identified three main trends that appear to be moulding the bakery going forwards. These include:


Plant forward: The steady shift in consumer preference from animal-based to plant-based foods is reshaping the bakery industry. While


many breads are already fully vegan, some baked goods still rely heavily on eggs, butter and dairy products. According to Puratos research, 56% of consumers worldwide are interested in plant-based options of (sweet) bakery products. The call for plant-based bakery innovations is huge, especially in the


Sourdough fermented bread stands out to consumers because of its digestibility.
