buckwheat is a daily staple rather than a niche health food. Across Ukraine and neighbouring Slovak countries, buckwheat has long been valued for its resilience, nourishment and versatility. When Tatyana later moved to the United States, she was struck by how unfamiliar — and often misunderstood — the ingredient was within mainstream food culture. “Most people assume buckwheat
is a wheat or some type of a grain,” says Tatyana. “In reality, it’s neither. Buckwheat is a naturally gluten- free flower
seed, and nutritionally
outperforms many of today’s trendy ingredients. It’s great for your gut, is loaded with fibre, protein, vitamins and antioxidants…and the list goes on.”

That disconnect between perception and reality became the catalyst
for
DEFI. Motivated by buckwheat’s untapped potential, Tatyana partnered with a scientist to explore white-space opportunities for a buckwheat-based snack. Through experimentation and category analysis, a clear gap emerged: products that feel genuinely indulgent, yet deliver more than empty calories. Not stripped-back diet foods or functional bars in disguise, but snacks capable of satisfying emotionally while providing meaningful nutrition. To translate that concept into product, Tatyana later partnered with
