CUTTING-EDGE BAKERY TECHNOLOGY


opened its pilot bakery plant — a dedicated space designed “to accelerate innovation for commercial bakeries across North America.” The grand opening included guided tours, live demonstrations and hands-on sessions with advanced bakery equipment. According to Puratos USA President Andrew Brimacombe, the facility exists because, “line time and baking skills can be a constraint on innovation and recipe optimisation in many industrial bakery environments.” The pilot bakery, he said, helps bakeries “develop, optimise, test, and scale products with speed and certainty, going from concept to commercialisation in one visit.” Ken Newsome, Executive Chairman of


Markel Food Group, which includes AMF, emphasised the broader impact of the launch: “This collaboration sets a new standard for how the commercial baking industry can harness real consumer insights in product development. It represents a major step forward in launching the next era of rapid, insight-driven innovation for bakers across the globe.” The plant integrates technical baking


expertise with automated equipment and co-creation spaces, offering customers real-world manufacturing conditions for


prototyping, training and trend


validation. As Puratos Global CEO Pierre Tossut put it, the partnership with AMF extends “a unique pilot bakery line in the US, allowing our customers to innovate faster,” a significant shift in how industrial innovation can be pursued without interrupting a company’s own production schedules. That focus on technology-enabled


agility continued with the October 2025 launch of a dedicated Ultra-High Temperature (UHT) bakery glaze facility, the first of its kind in the United States. According to the company, the new plant brings advanced automation and digital workflows closer to U.S. bakeries and underscores Puratos’ commitment to innovation, food safety and sustainability. At the opening event, Brimacombe


highlighted the competitive edge this facility offers: “Glaze is a powerful driver of category growth, especially in
