Chef Gill Parker has been at The Priory Restaurant in Scorton for 35 years after beginning her working life there as a pot washer when she was still at school. Here she shares another one of her favourite recipes with us.
1 IAN WILDE just perfect for summer
The Priory Scorton Strawberry Scones
Makes 7-8 Scones (can be halved
tnc-ifyou require less but they freeze well)
Ingredients 500g (11b) SR flour 75g (3oz) butter 75g (3oz) caster sugar
S 2tsp vanilla essence 'A pint milk (can vary depending
on ripeness of strawberries) 140g (5oz) chopped, fresh
strawberries 1 egg & 2 tblsp milk for brushing
Heat the oven to 200°C. Place flour into a bowl and rub in the butter until it resembles breadcrumbs. Mix in the sugar, strawberries and vanilla
essence then slowly add the milk (I have found the amount of milk can vary depending on the firmness of the strawberries). Mix until it resembles a dough, not too sticky, though, so you may not use all the milk. On a floured surface, flatten out
the dough to 1 inch thickness (you can use a rolling pin but I prefer doing it by hand) and cut using an 8cm round cutter. Re-roll the trimming, cut out more until the dough is used up.
. Whisk the egg and extra milk up with a fork then place the scones on a baking tray and brush the tops with the egg/milk mixture. Cook for 15- 20 mins until risen and golden. Delicious served with butter,
whipped cream and sliced strawberries.
