Method 1. Soak one pound of


dried peas in plenty of cold water overnight. 2. Take either a ham


shank or some bacon ribs and if they are thought to be excessively salty, soak them in water overnight. 3. Boil the ham shank or


bacon ribs in water until the meat is very tender. Remove the shank or. ribs, but retain


the stock. 4. Take all the meat from


the bones and chop it into tiny bits. 5. Pu t the soaked peas


into the stock, bring to the boil and simmer for about one hour. 6. Then add the meat and


a couple of finely chopped carrots. Bring back to the boil and simmer until the ■ peas are mushy. • Some people put in


some suet dumplings for the last 20-30 minutes to add ■bulk to the soup.

ONE of the largest Chilean wineries, Con­ cha y Toro, can trace its name back to 1718 when the then King of Spain gave the title of Marques de Casa Concha to one of his


Chilean subjects. One of their descendants, Don Melchor


de Concha y Toro founded the current company, was married to a lady of French extraction and also owned a ■vineyard. In the intermittent years the company grew and grew until by 1969 it boasted to pro­ duce about a third of all Chilean wine exports. (About one 20th of the total annu­ al production). It now has over 3,500 hectares of vines


under cultiva­ tion in over 10 prime loca­ tions stretch­ ing from Casablanca in the North to Lourdes, West of Talca in the South. With over eight vini­ fication cen­ tres, current production is over 10 million cases a year and rising. All this does not mean poorer quality, on
