SEAHOUSES SMOKIE IN BATTER WITH CUCUMBER DRESSING with Hans Norenbei^ of Blacketts Restaurant, Bamburgh, Northumberland.

WHILE visiting Bamburgh, I was so impressed by a restaurant there that I thought I would share it with you. We visit ed Blacketts Restaurant, along with our old chums, Carol and Dave, who have just relo cated to Bamburgh. and four other friends. Bamburgh is a wonderful atmospheric vil lage, dominated by its castle, standing on a

rocky plateau overlooking miles of beautiful sandy beach, commanding fantastic uninter rupted views of the Northumbrian coast. Holy Island and the Fame Islands. The castle became the passion of the first

Baron Armstrong, engineer and industrialist, who in the 1890s began its renovation and refurbishment. This love of Bamburgh was passed down through the family to the late Lord Armstrong, who personally oversaw the completion of his ancestor's dream. Today, Bamburgh Castle is still the home

of the Armstrong family and visitors are able to enjoy what has been described as the finest castle in all England, however when we

m tnsited the castle had just closed for the win

ter months. After a walk along the beach we were all

ready for a good meal. Blacketts Restaurant is run by Hans Norenberg who is front of house while his wife, Jean, does all the cook- ing.Their recently refurbished award-win ning licensed restaurant is in the centre of Bamburgh. Our party enjoyed their 'various dishes, but

my husband in particular raved about the signature dish of the house, deep-fried Sea- houses smokie in batter, served with a cucumber dressing. Carol and Jo enjoyed loin of pork, smoked bacon steak and pork and chive sausage while the remainder had vari-

' ous steaks, superbly cooked and served. Par ticularly good were the specialist potatoes which accompanied the main dishes, these were the variety Ratte, grown in the Borders at Tiptoe Farm; very delicious.

• 8oz (250g) Smokie • 4oz (125g) self-raising flour 01 sp (5ml) baking powder • 1 tblsp (15ml) malt -vinegar • water.

Ingredients (4 portions)

1. Sieve the flour and baking powder at Method

least twice to evenly distribute gluten con tent and the baking powder. 2. Add the -vinegar and enough water to

form a smooth batter; the mixture should be kept quite thin or the batter will take too long to cook and the fish will dry out.

Dressing prepare 2 hours earlier for flavours to infuse.
