METHOD 1. Melt the butter in a small saucepan and add the t>
flour. Cook for 1 minute, stirring continuously.; Remove from heat and gradually stir in the milk; :
■Return’to the heat and cook for 2-3 minutes until-i mixture thickens.

- 2. Remove the pan from the heat and add the crab- J meat, lemongrass,.chilli,- ginger, salt,-pepper,and 30gn breadcrumbs. Mix together and leave to cool. : ; 3. Using wet hands, shape the crab mixture into 10 ; cakes. Dip the crab cakes in the beaten egg and coat .- in the remaining breadcrumbs. Cover and chill for 20 s minutes.
:;-. 4; Heat the oil in afrying pan. Lightly cook the® cakes for 3-5 minutes on each side or until golden brown.

TO many first- time wine drinkers their first
• experience will be with a respected branded wine. They may shun a Chateau in favour of a
Hardy’s Cabernet Merlot, while not realis ing that these two grapes were used for the. Chateau. The world’s top-selling wines, by volume are, by and large, all household brand names - very clever marketing in magazines, newspapers and television has made this possible. Who has not heard of Hardy’s, Blossom
Hill, E. and J. Gallo, Jacob’s Creek and Kumala? Incidentally, these are in order from the number one best seller to number five. Take the next five top sellers, Stowells, Lindemans, Wolf Blass, Banrock Station and Rosemount and there is not a single French company represented.
