for many of their children who visit the restaurant. A good following indeed. To help him keep up this hectic
Van Heumen, arrived in England from Holland aged 18 and worked for a while in a restaurant in Berkshire. In 1973 he came North to work at
what was then the Saxon Inn, just ' outside Blackburn, where he was head chef. A spell in Cardiff followed, this before he returned to Lancashire and the famous Foxfields Hotel. • / All this and much more will be
revealed, some time in the future, when Henk completes writing his own cookery book, laced with anec dotes of his career, almost a biogra phy. Over the years, one of his greatest
delights a t being in the North of England has been his time spent cooking for customers who have patronised him for all of the 19 years in the North, and now he is cooking
lifestyle, Henk has many hobbies including weekly visits to the Rib- blesdale Pool for a swim, walking in the beautiful hills round about, gar dening and, of course, ski-ing. This year he visited Italy for a week on the slopes and, I suspect, some pasta dishes and the local wine. Other desserts which feature on the
10th anniversary menu include Dutch apple pie, dark chocolate mousse, fresh raspberry ta r t and a
selection of cheeses. BLUEBERRY CHEESECAKE Ingredients
0 60gr digestive biscuits, crum
bled O 50gr butter 9 3 leaves gelatine (available from
Deli-Med or Booths) 9 3 tbsp of liquid (water or
liqueur or a flavouring) 9 3 eggs (separated, save one
white and whip until firm) 9 250gr cream cheese or quark
0 50grsugar © 1/2 pint whipped cream Method
1. Melt the butter, mix with the
crumbled biscuits and form a base in a cake tin lined with greaseproof paper. Place in the fridge to harden. 2. Soak the gelatine in cold water and dissolve in the 3 tbsp of liquid,
leave to cool. 3. Whisk the egg yolks and the
sugar until light, mix in the cream cheese and the melted and cooled gelatine. Add the lightly whipped cream and the whipped egg white. Pour into the prepared biscuit based
tin. 4. Top with blueberries set with a
gelatine leaf or with some blueberry jam.

region of Priorato, whose dark, almost bitter, toughly tannic and very alcoholic wines I was never impressed with, have changed for the better. From an enclave in the "Denomi-
nacion de Origen" or "D. 0." of Tar ragona, which is where Priorato is sit uated, comes a brambly, jammy and oaky wine of immense structure and length. All of which are important for differing reasons, but put together as well as this wine is, and you have all the dimensions in proportion - what is called a quality wine, and bal

WRITERS and poets have been inspired by Pendle Hill over the centuries. But few .have lived and worked so closely to it as one of the latest admirers in verse, Clitheroe's
Mrs Joan Marsh. Now one of her poems has been
published in a special anthology. Mrs Marsh has recently retired
from the Kaydee Bookshop after 17 years, some of them in charge of the children's books. She will now have more time for
the talks and poetry readings she gives to local organisations. Closely connected with St Paul's
Church, Low Moor, and clerk to the governors of St James's School, Clitheroe, Mrs Marsh is well known among friendsfor her poetic Christ mas cards on Biblical themes.

Mind's Destination," an anthology about the places people have lived in
or admired. The opening lines remark how the
hill looked down on Stone Age man and ask: "Were you there when earth began, ejected from a boiling sea, of molten lava, forcefully?" The hill's changing moods delight
the eye - "On a damp and drizzly day, the mists descend on Pendle clay, though now and then through clouds of grey, your slopes outlined still
point the way." Snow really shows up the hill's
beauty, notes the poet, but even in ordinary times "The weary traveller, coming home, sees you there, vast Pendle Stone, and knows that now the journey's done, re-assured and not alone." Mrs Marsh's Christian faith, while
not mentioned in any bold terms, is clear from her last verse. She asks "A billion years from hence will you, still command the moorland view? Or will you crumble, fade to dust? I cannot answer, only trust." TIM PROCTER
