W E have a wealth o f tea rooms, c o f fe e sh op s and ca fe s in and around Clitheroe, all of which serve wonderful, tasty home-made food. Our Dish of the Week recipe comes


from one such place, Mansell's Licensed Coffee Shop, in the Swan Courtyard.


Proprietors Rachel and Steven


have been running Mansell's for only six months, but already they have many regular customers who enjoy their exciting and different dishes fea­ tured on the menu. Both are trained chefs, but Steven


spends most time in the kitchen while Rachel greets and serves the cus­ tomers. Rachel also manages to find time to make the delicious cakes which are so popular, particularly the Victoria sandwich and scones. Other dishes which seem to be firm


favourites with the customers are Steven's delicious soups such as veg­


etable and lentil, or his hot beef and onion muffins which go like hot cakes as does the steak and ale pie. New on the specials board is a deli­


cious sounding smoked duck salad with dressing and a sirloin steak, herb butter, potatoes and vegetables. Starting at Easter, the couple are


to open on Sundays, for a late coffee break, lunches and afternoon snacks, to try to cater for the many visitors who enjoy wandering round quaint Clitheroe, on a fine spring day. For this they will introduce a new menu with many exciting and different dishes including a new variety of sandwiches for those who wish to


have just a light snack. PAN FRIED SALMON FILLET


WITH SCALLOP, SAFFRON AND WATERCRESS SAUCE (serves four) Ingredients


O 4 x 8oz. salmon fillets


O 4 large scallops ® 1/2 bunch of watercress 9 6 strands of saffron O 1/2 pint double cream Method


1. Pan fry the salmon on both sides


until just cooked (approximately five minutes each side). Keep warm. 2. For the sauce: Bring cream to


the boil, reduce heat and simmer. Add chopped watercress and saffron, simmer for a few seconds. 3. Last of all add the sliced scallops and continue to simmer for two min­


utes. 4. Divide the sauce between four


hot plates. Sit the warm salmon on top of the sauce and garnish with lemon and dill. Chef’s lip: Serve with new potatoes and mange tout or a green salad.

I W EN T to a rather nice wine tast­ ing last week, and tried many fine wines from all parts of the world The reds were mainly pinot noir,


cabernet, or merlot, so it was refresh­ ing to try the Portuguese reds whose wines are made from mainly indige­ nous grapes, making them a bit dif­ ferent and in many cases surprising­ ly good, in both quality and value. A wine I am always recommending

"M IX E D media images" a t the Platform Gallery's latest exhibition produced mixed reactions for me, as I gazed in bewilderment at some of the exhibits on display - and some of the prices. Call me an art novice, but I ’m
