.CARBONARA PUMPKIN PASTA with Loyd Grossman

WHILE shopping in Clitheroe . this week I have seen lots of pumpkins on display so the idea for a Dish of the Week recipe

came to mind. This year celebrate Hallowe'en

with some tricks and treats of your own. Usually the pumpkins are hol lowed out and used for decoration, or for children to carry round; with a candle inside. As witches fly off on broomsticks

and pumpkin faces flicker mysteri ously,. why not cook up a party for friends and neighbours with this recipe devised by Loyd Grossman, using his delicious sauce. Carbonara - the sauce of Italian

banger baguettes - cook sausages over a bonfire or barbecue and serve on French baguettes with spoonfuls of tomato and chilli or tomato and . basil sauce. Cook jacket potatoes and j serve with one of the above sauces and top with cheese.

FOR the last few weeks I have been bombarded with white

wine samples from the southern hemisphere, most growers con sidering the 1998 vintage to be the best on record, and from what I have tasted, I think they

may be right. So this week I would like to recom

mend.a 1998 Chenin Blanc from South Africa. 1/Avenir, wine of origin Stellenbosch. That says it all. Stellenbosch is the heart of wine

estates dedicated to the growing and production of fine wines on an inter

national level. Marc Wieche, the winemaker, was

praised for his 1997 wine, being named as the Cape's top chenin. He thinks the 1998 is even better, and

who am I to argue with that. 1998 L'Avenir C h en in Blanc a t

£5.89 is grown on 25-year-old unirri gated bush vines and unoaked. Spicy, apricot, lemon-scented on the nose. Full of lively fresh appley flavours on the palate with a firm, long, spritely finish. A delicious wine to be enjoyed with a variety of cuisine (with the appley hints it goes particularly well with pork) or as an aperitif.
