THIS week’s Dish of the Week recipe comes from one of the oldest establishments in the Ribble Val­ ley, The Shirebum Arms Hotel and Restaurant. Head chef a t the Shireburn is


Derek S later who has been in charge of the kitchens for four-and- a-half years. Previously he worked at the Dunkenhalgh Hotel, Clay- ton-le-Moors, for seven years. His training included time at the Gle- neagles Hotel, in Scotland,' and London's Savoy Hotel. Owner and proprietor of this


lovely country hotel is Mr Steve Alcock, who bought the business four-and-a-half years ago. He origi­ nally trained as a chef in Switzer­ land before switching to hotel man­ agement. He managed a Blackpool hotel before joining Scottish and Newcastle Brewery running vari­ ous hotels and res tau ran ts throughout the country for 12 years.

has recently undergone major changes to ensure the highest pro­ vision of service as well as first- class facilities. This historic hotel can now offer


full civil wedding ceremonies. These can be followed by an excel­ lent wedding breakfast, evening party and romantic accommoda­ tion for the bride and bridegroom and guests. The Shirehurn Hotel boasts an

Method 1. Sear the duck breast in 1 tsp

AND RED ONION COMPOTE Ingredients


O 1 duck breast O 1 tbsp honey


6 2 thsp olive oil O 2oz. kumquats


olive oil, glaze with honey and cook in a moderate oven for 15 to 20 minutes. 2. Slice the onion and quarter the kumquats, saute both in 1 tsp olive


oil until soft. 3. Add brown sugar and cook for


a further minute. Add the red wine and red wine vinegar and bring to the boil, simmer for five minutes,


season. 4. Place the compote on a plate,


slice the duck breast and neatly


arrange on top. 5. Simply garnish with a couple


of physalis (cape gooseberries) for maximum effect.

AT this time of year, we have the arduous task of attending wine tastings trying hun­ dreds of wines, now mainly the new vintages and occasionally new wines. Here are two I tried recently from grapes I had never


encountered before. The first, at a tasting at Manchester Airport, was 1997 Terret-Sauvignon Blanc Vin de Pays


D’Oc at £3.49. Terret is usually put into southern French blends,


but this particular batch was so fine it was decided to make a special wine incorporating 70% with sauvi- gnon. The wine has a rich, peachy base, while the sauvignon adds herbaceous aromas and a citrus fruit lift on the finish. I t is a lovely aperitif or nice with


most fish dishes. The second wine was brought into the shop by an

Australian. I t comes from Sicily and is made from Nero D'Avola and Nerello Mascalese 1997 D'istinto at £3.39. New World wine-making techniques were used in making this wine, achieving the ultimate balance between acidity, tannin and alcohol. This red wine has a brilliant, deep red colour, is packed with rich fruit flavours and has a pleasant fresh finish. A wine to be drunk young on its own or with most meat dishes. I have two more tastings lined up next week, so I'll report back if I find any more bargains.
