Here we bring you an original cocktail recipe, Pineapple and Banana Julep showcasing the Smoked Pineapple variant. The cocktail features just four ingredients and so is quick and easy to create – yet the apparent simplicity belies the complexity of the taste.

Rooster Rojo’s Master Distiller experimented with various pineapples and different roast levels for over a year until the perfect variety and smokiness was found. Red Spanish Pineapples were selected because of the distinctive taste profile they provide. Blending this pineapple infusion with Rooster Rojo Anejo Tequila results in a smooth, subtle drink which is one to sip and savour. This tequila has notes of ripe banana and so mingles brilliantly with the banana liqueur in this recipe.

Rooster Rojo Pineapple and Banana Julep
Ingredients • 35ml Rooster Rojo Smoked Pineapple Tequila • 15ml Banana liqueur • 10ml Lemon juice • 15ml Demerara syrup
Method Add all the ingredients to a shaker with ice. Shake and then strain the cocktail into a Julep cup or tumbler filed with crushed ice. Garnish with pineapple leaves, a large edible flower, and a wedge of pineapple.
