Patrick Rue, the Bruery’s namesake, has been producing imaginative offerings since 2008. Aging many of the beers post-fermentation in wine and spirits barrels, the Bruery (and related operation Bruery Terreux) challenges our concepts of what beer can taste like. Ostensibly Belgian-inspired,the team also takes inspiration from muses like horchata and “The Twelve Days of Christmas.” TRY Tart of Darkness, a barrel-aged sour stout. It’s not for everyone, but the combination of mouth-puckering tartness and warm roast, rounded out with cherries and vanilla, is captivating.

DOGFISH HEAD BREWERY Milton, DE
Dogfish Head’s slogan reads “off-centered ales for off-centered people,” and the brewery follows through with beers like continually hopped IPAs (one weighing in at 18 percent) and others based on recipes from ancient civilizations. The brewery continues to innovate in and out of the bottle; it renovated a former motel into a cozy beer oasis near the brewery. TRY The session-sour hybrid, SeaQuench Ale, which blends gose, kölsch and Berliner weisse.

Florida hasn’t traditionally been a bastion of craft beer, but Cigar City is one of the breweries turning that tide. Jai Alai, a grapefruit-forward IPA, is its most familiar offering (though beer diehards will quiver at the mention of imperial stout Hunahpu). TRY Maduro, a brown ale that shows what this style can be when well made.

Hailing from the Pacific Northwest, one of the richest regions for beer in the country, Deschutes stands out because of its broad portfolio, commitment to sustainability and

Those laurels come thanks to offerings like its Easy Jack, Union Jack and Double Jack (session, single and double IPA, respectively), plus a range of barrel-aged brews. TRY Parabola, a 13.1 percent behemoth that is blended from beers aged in barrels from a who’s who of American whiskey producers: Elijah Craig, Pappy Van Winkle, Woodford Reserve, Four Roses and Buffalo Trace. It’s released in limited quantities but worth your tastebuds’ time to seek out.
