While lots of us have been spending more time in our kitchens during the pandemic, Joe has been doing his bit to get the nation cooking with a series of his mouth-watering and inspirational recipes recorded for the @stovecook app.
“It was great to see people really pushing themselves with their cooking and sharing their ideas as a community so when I was approached to do this I thought it seemed a really good idea.”
Now it’s back to the work kitchen. Since restaurants have re-opened, The Wychwood has embraced outdoor dining and in their large garden, which can sit around 120 diners, they’ve created lots of covered dining space with comfortable leather seating and heaters nearby. Last year they also added an outside bar too, perfect for alfresco socialising.
“None of us were really sure how it would work with outside eating only but since we reopened we have been really busy and have already decided to go from just weekends to daily again.”
Like many, the pub has been offering a reduced menu which works with a reduced staff and also for the diners who might be facing inclement weather.
Now with indoor dining allowed, Joe has had to bring some new ideas to the menu for customers eager to eat out in style once more, including a range of plant based meals.
“Lots of chefs don’t enjoy meat free cooking but for various reasons it has become more fashionable. I use fresh veg all of the time and don’t see it as a challenge. I just like to cook what the customers want.”
