ame foods in this country taste like they have always been here, but
many are welcome imports from far-flung countries. Tey have provided a plentiful supply of cheap, readily accessible meats and now we regard them as comfort foods – a luxury, even. From the deer which strode the Kentish
woodlands for thousands of years to the more recently introduced rabbits and pheasants, game is rich in flavour, versatile and hearty. And we are lucky in this part of Kent to still be
blessed with first-class family butchers and farm shops where these nutritious meats are available all year, round. So why has the popularity of game endured?
Venison Meat from deer has been eaten by man since prehistoric times as an essential source of protein, fats and vitamins. From a chef’s point of view, venison is relatively low in fat and cholesterol, its look is of beef, but its earthy taste owes more to the woods and forests where the animal forages. Tere are six species of deer in the UK, but
only the roe and red deer are actually native to our lands, with the others (fallow, Chinese water deer, muntjac and sika) all introduced over the years. Tere are myriad ways of cooking, from slow
roasting, casseroling, stewing and even frying. It is highly recommended as mince, too.
Most people would struggle to tell the
difference between the species, but when cooked for hours on a low-ish heat in red wine, herbs and stock, it is melt-in-the-mouth delicious. Always serve with mashed or roast potatoes and seasonal local vegetables.
