quent, shocking fires shook us to the core in this part of Cali- fornia, “the land of dreams.” Te fire- fighters, the police, and all the folks who bravely fought the

battles against the monstrous fires, are each and every one profoundly thanked by all of us. We can only hope and pray that there will be no more loss of life and that those who survived will build new dreams safely. Disregarding the thick


smoky air, people arrived, in the spirit of pulling together to move forward to recovery, when the Salvation Army Se- nior Activities Center, Carol Orr, Director, and Paul Doyle, the publisher of Upbeat Times, carried out their ambitious plans to collaborate to hold a First Annual Holiday Market at the SASA Center on Novem- ber 10th. A percentage of all the sales is going to the all year round Salvation Army Fire Re- covery Fund. Te busy market drew a large attendance, from 10 am to 7 pm. Delicious food, great hot cider, music, art, all very pleasantly surprised the friendly participants.

Te Disability Services and Le- gal Center gave out brochures, thanks to Program Director Lake Kowell, to help us all learn more about their deeply appreciated, essential work and activities. Donna Trevethan, the


founder of her non-profit Flowers for a Cause, is build- ing an essential network to as- sist other non-profit groups to help everyone discover exactly how much is going on to serve large segments of

Jameson really bounced in his grandad’s arms when everybody joined to sing Happy Birthday to Paul! Tis is the time for festive


foods. In our family’s ancient Austro-Hungarian tradition, I recalled a special way to pre- pare Mushrooms. Tis tasty recipe would serve about 4 to 6 people nibbling around a table of goodies. You would need ½ lb of your favorite mushrooms, sliced; 2 tblspns unsalted but- ter; a small onion—minced; about 2/3 cup of rich soup stock; 1 tblspn flour; 2 tblspns water; salt, freshly ground pep- per (Tellicherry is excellent); 1 cup of sour cream. Directions:

ite saute pan, melt 1 tblspn of butter. Brown the mushrooms carefully. Brown the minced onions in another pan gently, seasoning with the salt and pepper. Warm the soup stock/ bouillion in a saucepan. Now add the mushrooms and then the onion. Stir all gently un- til the mushrooms are tender. Next, stir the flour which you have mixed first with the water. Lightly whip the sour cream (with a fork) before adding that to the mushroom mixture. Simmer, while stirring, for about 5 minutes.

great as a first course, spooned onto buttered English muffins, or on golden toast “points.” Tepertos Pogasca is Hungarian for Bacon Biscuits. Tis recipe makes about 1 dozen. You will need: 8 oz of unsalted butter; 2 cups flour (siſted); 1 pkg of active dry yeast—and 2 tblspns of water to mix and stir it up; 1 tblspn baking powder; a pinch of pepper and about a ½ tspn of salt; 2 egg yolks; ½ cup of sour cream; 1 lb of your favor- ite bacon—fry it up crisp and then crumble it.
