egg. Heat oven to 475 degrees. (Tat’s a hot oven. Everybo- dy’s oven responds somewhat differently. You need to judge it.) Either in your mixer or in a bowl –if you wish to have a workout—combine and cream butter with the flour, yeast mixture, baking powder, salt, pepper, egg yolks, and sour cream. Beat until smooth. Place the dough on a lightly floured board. Knead it until it feels “complete” or smooth. Roll out evenly. Now spread
half of the crumbled bacon across it all. Fold one half of the dough over the other half. Roll that out again. Sprinkle/ spread the rest of the bacon on the newly rolled out dough. Next roll it to about a thickness of one inch. Use a small cookie or biscuit
cutter to cut the biscuits. A small juice glass (dip in flour before each “cut”) works com- fortably.
Place each biscuit
to be baked on a greased and floured baking sheet. Be sure to brush the tops of each with the beaten egg. Bake at 475 degrees for about 5 minutes. Ten lower the oven temp to 375 degrees. In about 10 to 15 minutes you will have mighty tasty Bacon Biscuits. A French great, great grand-
