Roasted Garlic Mashed Sweet Potatoes


1 head of garlic 1 tablespoon extra-virgin olive oil Dash of salt 7½ cups sliced sweet potatoes (3-4 large potatoes) ½cup butter 2/3 cup heavy whipping cream 3/4 cup Bob Evans premade mashed potatoes Salt and pepper to taste


Preheat oven to 275 degrees. Place the garlic in a piece of aluminum foil large enough to wrap around the garlic. Cut the top off the garlic so the bulbs inside are slightly exposed. Drizzle with olive oil and salt, and close the foil. Bake for 50 minutes and then remove from oven. If you are making this ahead of time, allow the garlic to cool and then refrigerate it.


Peel the potatoes and slice into 3/4-inch pieces. Bring a pot of salted water to a boil and add the sweet potatoes. Boil 20 minutes or until fork tender.


As soon as the potatoes are done, drain and add the butter and roasted garlic. Do a quick mash. Then add the heavy whipping cream and store bought potatoes and mash until combined, adding salt and pepper to taste as you go. Serve warm. ■


Mashed sweet potatoes are divine and often impress people who don’t like sweet potatoes.
