No Bake Easter Cheesecake You will need;-
550g Digestive biscuits. 280g Unsalted butter. 400g Mini chocolate eggs (any variety plus extra for decoration
550ml Double cream. 560g Full fat Cream Cheese. 140g Icing Sugar. Juice of half lemon
Method
Crush the biscuits (easy to do if you put them inside a plastic food bag and crush with a rolling pin).
Melt the butter and add the crushed biscuit crumbs then press into an 8” tin.
Chop up some of the mini chocolate eggs into small pieces.
Mix the Cream cheese, whipped cream, icing sugar, lemon juice and chopped chocolate egg bits together in a large bowl.
Cover the biscuit base with the mixture and level out. Place in the Fridge for at least two hours. Remove the cheesecake from the tin.
Place the remaining mini chocolate eggs on the top to decorate. EAT - YUMMY!
