SNOWMAN CUPCAKES Makes 12
FOR THE CUPCAKES 125g butter, softened 125g caster sugar 125g self-raising flour 1 tsp vanilla extract 2 large eggs
FOR THE ICING 50g butter, softened 50g cream cheese 200g icing sugar 1 tsp vanilla extract 2 tsp milk
FOR THE DECORATION 24 large white marshmallows 12 orange Tic Tacs Black icing pen 12 Rolos Ready-made chocolate icing 12 chocolate Matchmakers
YOU WILL NEED Cocktail sticks
1 Preheat the oven to 180C/gas 4. Line a muffin tin with muffin cases.
2 Measure all of the cake ingredients into a large bowl. Whisk the ingredients using an electric hand whisk until light and fluffy.
Spoon the mixture into 12 cases. Bake for 18–20 mins until well risen and lightly golden. Leave to cool.
Measure the butter and cream cheese into a bowl. Whisk until creamy. Add the sugar, vanilla
and milk. Whisk until light and fluffy. Spread over the cupcakes, reserving a little for assembling the snowmen.
Stick two marshmallows together with a little of the icing to form the shape of a snowman (head and body). Thread the middle of the marshmallows through a cocktail stick to secure them (make sure you remove this before eating the cupcake). Repeat with the rest of the marshmallows to make 12 snowmen in total.
Make a hole in the middle of the snowman’s head using a cocktail stick and insert an orange Tic Tac for the nose, using a little icing to help make it stick. Draw on the eyes, mouth and buttons using the black icing pen.
To make the hat, roll out the chocolate icing, cut out a small circle and place on top of the snowman’s head, attaching it with a little of the icing. Place a Rolo on top.
Make a hole horizontally through the body of the snowman using a cocktail stick and push through a chocolate Matchmakers to create the arms.
Using the end of the cocktail stick used to secure the two marshmallows, place the snowmen on top of the cupcakes.
HOT CHOC SNOWMEN Makes 3
FOR THE HOT CHOCOLATE 1 litre of fresh milk 4 tbsp drinking chocolate Sugar to taste (optional)
FOR THE SNOWMEN Pretzel sticks 9 medium size marshmallows Orange jelly beans 50g dark chocolate chips Chocolate icing pen
YOU WILL NEED Cocktail sticks
1 To make the marshmallow snowmen, thread three marshmallows onto a cocktail stick.
2 Using a spare cocktail stick, make small holes for the arms

150g dark chocolate chips 3 bananas 18 orange M&M’s White ready-to-roll icing Chocolate icing pen
1 Peel the 3 bananas and cut each in half. Place in the freezer.
2 Melt the dark chocolate into a bowl over a pan of simmering water until runny. Leave to cool slightly.
3 To make the penguin’s eyes, roll out small balls using the ready-to-roll icing and pipe pupils onto the eyes using the
chocolate icing pen.
4 Once completely frozen, remove the bananas from the freezer and peel.
5 Dunk the top half of the banana into the melted chocolate, gently rolling so you get a longer coating on the back. Dunk the bottom of the banana in the chocolate to create the feet.
6 Carefully stick on the eyes and do the same with the M&Ms for the nose and two for the feet.
7 Place back in the freezer briefly to set and then serve.

4 Using the chocolate icing pen draw on the buttons, eyes and mouths of your snowmen. Place to one side.
5 For the hot chocolate, put the milk into a pan. Bring to a simmer and spoon in 4 tbsp of drinking chocolate, stir until dissolved.
6 Place the snowmen on top of your mugs and serve (be careful to remove the cocktail stick before tucking in).
