Sweet potatoes are a staple of a holiday meal. This sweet potato mash recipe, courtesy Harps Food Stores, puts a new spin on an old favorite.


SWEET POTATO MASH 3 cups cold mashed sweet potatoes 1/3 cup milk ¼cup brown sugar ¼cup butter, melted 1 eggs 1 teaspoon vanilla ¼teaspoon salt Topping: 1/3 cup brown sugar 1/3 cup chopped pecans 3 tablespoons flour 3 tablespoons butter, melted Preheat oven to 350 degrees Spray six ramekins or oven proof individ- ual serving dishes with nonstick cooking spray. In a large bowl, mash the sweet potatoes, milk, brown sugar, butter, egg, vanilla and salt until fluffy. Divide the mixture among servings dishes. Combine 1/3 cup brown sugar, pecans, flour and 3 tablespoons melted butter until blended; sprinkle over the top of sweet potato mixture. Bake uncovered for 25 to 30 minutes or until golden.
