Spinach Salad with Fuji Ap- ples, Pecans, Dried Cranberries and Orange Vinaigrette Makes 2 dinner size servings or 4 as a side salad 1 (8-ounce) bag of fresh spinach 1 large Fuji apple, chopped 1 ounce of dried cranberries (about 2 tablespoons) 2 tablespoons chopped red onion ½cup pecan halves 4 ounces blackberries Orange Vinaigrette: Juice and zest from 1 orange 3 tablespoons extra virgin olive oil 2 tablespoons excellent quality balsamic vinegar (I use 18 year old vinegar) 1 tablespoon honey (or to taste) The better quality balsamic vine- gar you use, the less honey you will likely want to add. Mix all the dressing ingredients in a food processor and pulse for 20 seconds. Taste and add a dash of salt and adjust seasoning as need- ed. Set aside to thicken for 5 minutes. If you can make this dressing a few hours ahead of time, that is best. In a large bowl, combine all salad ingredients. Add desired amount of dressing. Toss and serve. Refrigerate leftover salad dressing.
