an effort to improve skills I

have gained over the last 3-1/2 decades, I continue to try new methods to cooking just about everything I could possibly put my hands on.

My good friend Patrick Oster,

At this particular cook-out project I bought a 13-14 lb. pre- cooked ham from Cash & Car- ry, made 1/4 inch slits on the outside of the ham and inserted cloves and let it sit at room temperature for several hours. I made a basting sauce of honey, brown sugar, dijon mustard, or- ange juice and honey, nice and thick to slather & keep moist for the fi ve hour BBQ.

I preset mesquite charcoal

in the base of the egg and got a fi re stared and adjusted the Egg to a steady 325-345 degrees. For fi ve hours, never having to add any additional charcoal, I

basted the ham with my slurry for the entire time, every 20-30 minutes. Traditionally, and in the past I’ve used the oven and or webber to cook a ham. But the Big Green Egg cooks it with a bit of fl avor magic! I usually put the ham in a pan(that comes with the Egg as an accessory). This way the juices don’t drip off into the charcoal and make a funny tasting smoke. Five hours later...incredible infusion

At the data-entry company where I work, the other operators and I share a coffeepot. One morning I took it into the ladies room to fi ll it with water. Then I began preening in the mirror, brushing my hair and reapplying some makeup. I didn’t realize how long I’d been until someone slid a note under the door. “You win,” it read. Any ransom demand will be met. Just release the coffeepot.” ~

of mesquite and apple wood. I added the apple wood the last 30 minutes BBQ ...so, so good!

Actual Calls: “Got a frantic call from a woman who claimed she had overdosed and needed help immediately. We arrive on scene, and she hands us an empty mint container, saying she took them all. That night she learned that you cannot overdose on mints.”
